Ingredients:

  • 1 ½ pounds (about 680g) potatoes (such as Yukon Gold or Russet), washed and cut into cubes or wedges
  • 2 tablespoons olive oil


  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)
