Crockpot Pierogi Casserole with Kielbasa

Ingredients:

  • 2 (12-16 oz) packages of frozen pierogies (any flavor you like)
    • 2 lb kielbasa or smoked sausage, sliced into rounds
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken soup)
  • 1 cup sour cream
  • 1 small onion, finely chopped
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter (optional, for sautéing onion and kielbasa)
  • ½ tsp garlic powder (optional)
  • ½ tsp paprika (optional)
  • Salt and pepper, to taste
  • Chopped parsley or green onions, for garnish (optional)

Instructions:




1. Prepare the Kielbasa and Onion (Optional):

  • Heat a skillet over medium heat and melt the butter (if using).
  • Sauté the sliced kielbasa and chopped onion for about 4-5 minutes until lightly browned and fragrant. This step enhances flavor but is optional.

2. Mix the Sauce:

  • In a bowl, combine the cream of mushroom soup, sour cream, garlic powder, paprika, salt, and pepper. Mix well until smooth.

3. Layer in the Crockpot:




  • Spray the crockpot with nonstick cooking spray.
  • Add a layer of frozen pierogies at the bottom.
  • Spread a portion of the kielbasa and onion mixture over the pierogies.
  • Spoon some of the sauce over this layer and sprinkle with a bit of shredded cheddar cheese.
  • Repeat the layers (pierogies, kielbasa, sauce, cheese) until all ingredients are used, finishing with a generous topping of cheese.

4. Cook:

    • Cover and cook on LOW for 3-3.5 hours or on HIGH for 2-2.5 hours, until the pierogies are tender and heated through, and the cheese is melted.
