  • 2 cups mashed potatoes (cooled)
  • 1 cup shredded cheese (cheddar works great)
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onions
  • Salt and pepper to taste
  • Optional: sour cream or ketchup for serving


Instructions:

  1. Preheat your oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin with butter or cooking spray.
  2. Mix ingredients: In a large mixing bowl, combine the mashed potatoes, shredded cheese, eggs, all-purpose flour, grated Parmesan cheese, chopped chives or green onions, salt, and pepper. Mix until well combined.
  3. Fill muffin tin: Spoon the mixture into the prepared mini muffin tin, filling each cup almost to the top. You can smooth the tops with the back of a spoon if needed.
