Ingredients:
For the crust:

  • 2 cups graham cracker crumbs

  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup crushed pineapple (drained)

  • 1 can (20 oz) crushed pineapple (drained)
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Instructions:
Prepare the crust:

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine the graham cracker crumbs, sugar, and, melted butter. Mix until it resembles wet sand.
  • Fill the bottom of a 9-inch springform pan with the mixture. Bake for 8-10 minutes, then let cool.

Make the cheesecake filling:

  • In a large mixing bowl, combine the softened cream cheese and beat until smooth.
  • Add vanilla and sugar extract and mix well.
  • Beat in the eggs one at a time, ensuring everything is well combined.
  • Fold in the 1/2 cup of drained crushed pineapple.
  • Pour the mixture over the cooled crust, smoothing the top.
  • Bake for 45-50 minutes, or until the middle just sets. Let it cool.
