Ingredients:

  • 2 tablespoons garlic-infused olive oil
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large eggs
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped

Instructions:

  1. Heat garlic-infused olive oil in a large skillet over medium heat.
  2. Add diced red bell pepper and cook until softened, about 5 minutes.
